Rhubarb and Custard Cake

This post is a departure from the blog’s normal fayre, but I was so impressed with the result that I wanted to share it with you.
If you have a rhubarb plant in your garden then I would suggest that you, like us, may struggle to keep up with the quantity of harvested fruit stems it produces in a season. This year we have taken two croppings – one in May and the other at the end of July. We have of course made a couple of Rhubarb crumbles and a rhubarb fool of sorts but I was keen to find an extension to our rhubarb repertoire. A few minutes googling and I had come up with a promising recipe on the BBC Good Food recipe which I thought we should give a go. The result is pictured below and I have to say it is delicious. We made it yesterday and we are already half way through it.

The full recipe and details can be found through this link to the BBC Good Food website and it is pretty straight forward, though our cooking times were a little different due to our occasionally temperamental Rayburn. If you try it out I hope you enjoy it as much as I am!
