Rhubarb and Custard Cake

This post is a departure from the blog’s normal fayre, but I was so impressed with the result that I wanted to share it with you.
If you have a rhubarb plant in your garden then I would suggest that you, like us, may struggle to keep up with the quantity of harvested fruit stems it produces in a season. This year we have taken two croppings – one in May and the other at the end of July. We have of course made a couple of Rhubarb crumbles and a rhubarb fool of sorts but I was keen to find an extension to our rhubarb repertoire. A few minutes googling and I had come up with a promising recipe on the BBC Good Food recipe which I thought we should give a go. The result is pictured below and I have to say it is delicious. We made it yesterday and we are already half way through it.
